Pisto is a Spanish vegetable dish made from various vegetables of the season like a ratatouille is cooked. In Spain it is also known as Pisto Manchego (“Pisto from La Mancha ”) or Moje , although it is known and cooked across the country.

Ingredients and preparation

This dish was probably coined by the farmers from the La Mancha region, who prepared this dish from the currently available, harvested vegetables from their own gardens . Pisto can therefore vary greatly depending on the season, the region and your own taste.
