Rice noodles are noodle-like foods made from rice flour . The rice noodles, mostly thin as spaghetti , come in different diameters and widths. Tapioca flour or corn starch are also added to some varieties to increase transparency and improve appearance and consistency. The rice noodle is very common in the various cuisines of East Asia .

Rice noodles, which are one to two millimeters thick and only need a very short cooking time of one to two minutes, are usually used for eating. You can also scald them with boiling water and let them soak for a few minutes. After draining, they can be processed further. In contrast to glass noodles , they keep their whitish color after cooking.

Country-specific variants and dishes

  • In China, rice noodles are particularly popular in the south. The rice noodles vary from region to region. They are available in different thicknesses with different diameters, i.e. round, called Mǐfěn ( Chinese  米粉 ) or Mǐfěntiáo ( 米粉 條  /  米粉 条 ), or as flat rice ribbon noodles , Shāhéfěn ( 沙河粉 ), or Héfěn ( 河粉 ) for short . M Reisxiàn ( 米線  /  米线 ) rice noodles from Guangxi are thicker and have a larger diameter compared to ordinary rice noodles.
  • Called Mihun in Indonesia - often in the Dutch spelling Mihoen (Indonesia was a Dutch colony until 1949). Mihoen Goreng is the variation with rice noodles of a popular dish, which is served as Bami Goreng with noodles and as Nasi Goreng with rice.
  • In Japan , Chinese rice noodles are also called bīfun as a cultural export ( Japanese 米粉 ビ ー フ ン ).
  • In Thailand rice noodles are eaten in noodle soup or fried as Phat Thai .
  • In Vietnam there are different types of rice noodles.
  • Pho - long, flat ribbon noodles that are eaten as part of a soup or fried ( Pho Xao in Vietnamese ).
  • Bun , which are similar in shape to European spaghetti, are served as a soup like the pho or as a side dish to other dishes.
