The Indonesian rice table is derived from the Dutch word Rijsttafel (in German about rice table ) and is a banquet of Indonesian cuisine .

history

This type of feast, originally unknown in Indonesia, was introduced by the Dutch during their colonial rule in the country to bring together various dishes, especially Javanese cuisine, in the form of a buffet on a long table. The "invention" of the banquet can be traced back to the time after the opening of the Suez Canal in 1869. Due to the significantly reduced travel time on the Netherlands-Indonesia passage, men who, for example, traveled to the colony as colonial officials for longer periods of time, brought their families with them in significant numbers, and Dutch women brought Dutch cooking, eating and serving habits to Indonesia, what about the development of the Rijstafel feastled. With the opening of the Suez Canal, the tourist development of Indonesia was gradually introduced by the colonial rulers who introduced the banquet into Dutch cuisine . The Rijsttafel developed into a popular holiday custom among colonial society; In the leading hotels in Batavia and Bandung , up to 60 different dishes were served at rice table banquets at the beginning of the 20th century. To this day it is considered the “crown jewel” of Indonesian cuisine.
