Schmankerl is a term from the Bavarian dialects . Originally, it was mostly used to describe a sweet pastry (cf. the formation in French "  Amuse-Gueule  " (German: "Gaumenschmeichler") for appetizer appetizers), today it is used as an expression for regional delicacies in particular . The Duden describes Schmankerl as Tyrolean for “delicious food”. In a figurative sense, Schmankerl can also mean “something special”. For example, the variant dictionary of the German Schmankerl also describes “a discount used as a lure” and as a “particularly interesting offer, special novelty, incentive, exquisite, special”, also for German-German bargains . In Austria, Gustostückerl also stands for a “particularly good piece”.

etymology

The origin of the term is not clearly clarified, so Schmankerl is traced back to Schmänkelein , which means something like crust and is derived from Schmand . In Schmeller's Bavarian dictionary from 1877 it says, for example: “What from Brey and Must sear on the dishes, crust”. A Viennese pastry made from omelette dough , which was twisted into small sachets and served as a garnish for desserts, was also referred to as Schmankerl or Rameln in Meyer's Großes Konversations-Lexikon from 1908 . In Johann Rottenhöfer's Illustrirtem Kochbuch from 1904, several dessert recipes for casseroles, creams, puddings and ice cream were described as delicacies. Already in 1842 Johann Georg Kohl described delicacies as “a kind of frozen food” in his travel reports from Austria-Hungary .
