In 1826 Michael Oppmann, cellar master of the Würzburger Hofkeller , produced sparkling wine for the first time in the Kingdom of Bavaria . In 1842 he founded his own sparkling wine cellar, which was established in Würzburg in 1843 and existed until the early 1990s.

His nephew, the winemaker's son Josef Oppmann, founded the fifth sparkling wine cellar in the Franconian metropolis of Würzburg in 1865 at the age of 23 . On October 15, 1871, his brother Johann Baptist Oppmann, who had previously worked as an assistant in the Hofkellerei, entered the business. A little later he was awarded the title of " Bavarian Court Supplier ". The sparkling wine cellar was internationally successful at an early stage and received awards at the world exhibitions in Paris , Vienna , Philadelphia and Melbourne . After the founder's death in 1889, the business was initially continued by his widow. On November 4, 1898, the winery was converted into a public limited company.

In the 1930s, the private bank Merck Finck & Co acquired a stake. From 1939 to 1965, Paul Bauer was a member of the company's board. The main building of the sparkling wine cellar was destroyed in the bombing raid on Würzburg in 1945 . Since the vaulted cellars remained intact, production could be resumed in 1947. In the post-war period, the Sektkellerei J. Oppmann took over the brands of the Sektfabrik Siligmüller, which had existed since 1841 and was founded in Würzburg in 1843 by Franz Andreas Siligmüller (1790–1864) as FA Siligmüller GmbH and which meanwhile belonged to Schönberger Cabinet AG . In addition, in 1988 the company name with the trademark of Michael Oppmann GmbH & Co. Since then, the J. Oppmann Sektkellerei has the sole rights to the name "Oppmann".

In 1986 Martin Konrad left the board. Franz Schimpel was the sole director until he was replaced on January 1, 1993 by the then 39-year-old Albert Friedrich. He expanded the product range in 2001 to include sparkling wine and sparkling wine cocktails, in 2009 to include sparkling wine from traditional bottle fermentation and from 2012 to include wine from New Zealand from Marisco Vineyards and from Rheinhessen under his own name. Nevertheless, during his tenure, sales fell from EUR 7.3 million (1992) to EUR 4.2 million (2018).

With effect from July 29, 2009, the company was split up into an operational part and a property management company (Oppmann Immobilien AG), which is also listed. The 75% share of August von Finck junior in the operative business was taken over in November 2011 by the executive board Albert Friedrich and the supervisory board members Reinhard Meier, Christian Meier, Wolfgang Kunz and Richard Sabitzer. Due to the separation from the traditional production site, a new building is required, which is to be completed in 2013 in the Würzburg industrial park east. In fact, the move did not take place until 2014. In 2012, the MWS GmbH Wein- und Sektvertrieb subsidiary was merged with the parent company. On June 1, 2018, the previous supervisory board member Christian Meier joined the management board, which Albert Friedrich left on July 31, 2018.
