Slyrs [ ˈʃliːɐ̯s ] is a distillery for whiskey in Schliersee in the Bavarian Oberland . It is the largest single malt producer in Germany.

Surname

The name Slyrs is derived from Slyrse , the old Bavarian name for the Schliersee and the monastery of the same name .

history

The distillery in the Neuhaus district was founded in 1999 by Florian Stetter, who trained as a brewer and maltster .

Since whiskey has to be stored for three years according to the law and the production quantities are comparatively small anyway, initially only a limited edition of 100,000 bottles was put on sale and distributed locally. In 2011 between 40,000 and 50,000 people visited the distillery.

In December 2014, a newly built warehouse was inaugurated on Mount Stümpfling at an altitude of 1501 meters, which can hold up to 40 barrels of 225 liters each. Under the special climatic conditions, the whiskey stored here should develop a different taste than that stored in the valley.

Slyrs Bavarian Single Malt Whiskey is distilled twice in a pot-still process in copper kettles with a capacity of 1500 l and stored in barrique barrels made from American white oak with a volume of 225 l. Since the end of March 2013, a Sherry Edition (no. 1) with whiskey stored in sherry barrels (Pedro Ximénez and Oloroso) has also been available.

As of August 2014, the distillery produces 70,000 liters of whiskey per year.

Barley malt is used as raw material, some of which is smoked with beech wood . The mash is crushed, mashed, purified, saccharified and fermented with yeast.

Hans Kemenater is the master brewer of the Slyrs distillery.

Slyrs Single Cask, 55.8 vol, 3 years

The above-mentioned 43% single malt, diluted with water to 30%, sweetened with honey and caramel and flavored with vanilla, is also the basis for a whiskey liqueur. Special bottlings such as Slyr's cask strength, PX or Oloroso have been available since 2012. A twelve-year-old whiskey has also been available since 2015.

In 2014, the Slyrs PX Finishing received the Gold Award from Whiskey Magazine as the best (continental) European single malt , the Slyrs Oloroso Finishing received the bronze medal. The following year, the SLYRS Bavarian Single Malt Whiskey won first prize in the Best European Single Malt 12 Years and Under category .
