The St. Peter's Abbey Bakery and Mill is an old bakery and watermill . It is located on the Almkanal in the Mühlenhof between Kapitelplatz and the Petersfriedhof in the old town of Salzburg . It belongs to St. Peter's Abbey .

history

Mills were already being operated in the stream of the artificially created Almkanales in the 8th century. This makes the Almkanal with its mills one of the oldest energy supply systems in Central Europe . The centerpiece of the Alm Canal was the 410 meter long tunnel into the city center that was cut through the Festungsberg between 1136 and 1143 . In the heyday of the 19th century, up to 120 water wheels were operated along the approximately 18 km long water pipeline network. Today there are 15 small power plants that together produce around 1.6  MW of electricity. Two more systems were added to these systems, one of which is the Stiftsmühle in the Mühlenhof near St. Peter. In 2007, the mill wheel was installed exactly at the point where at least one water wheel always drove the mill in the monastery bakery from 1160 to 1922. A Francis turbine was used for this purpose from 1923 until the mill was closed . However, this was expanded in 1966 because the mill operation was no longer profitable. The idea of ​​rebuilding a mill wheel came from Franz Grabmer, Müller, baker and former managing director of the Stift and Salzach mills in Mülln , which also belong to St. Peter Abbey. With the consent of the Archabbot of St. Peter Edmund Wagenhofer and the “Stiftsarm” water cooperative. A mill could be built here using the old hydraulic engineering without interfering with the historical structure. The mill wheel generates electricity via a gearbox and a generator, some of which is used to operate this traditional mill. The rye flour has been ground on site since 2010 . This is done by a combination of three millstones and sieves, which prevents overheating of the grist and thus the destruction of valuable ingredients. The grinding products are conveyed pneumatically . Franz Grabner is the tenant of the mill and the bakery, which has existed since the 12th century. Especially the “St. Peter bread ”, which is baked here, is known nationwide.

Mill

The mill in the anteroom of the bakery was rebuilt in 2006. The water wheel is overshot made of larch wood with a metal rosette and shaft . It drives a generator via a maintenance-free gear drive . The wheel has a diameter of four meters and a width of two meters. It generates an average of 10 kW at six revolutions per minute and a regulated water volume of 400 liters. The mill wheel was manufactured by master mill builder Felix Neuhofer from Henndorf am Wallersee and has been running smoothly since installation in 2006. To increase the durability of the mill wheel, it was covered.
