Ulrich Freimuth

Ulrich Freimuth (born October 16, 1914 in Wismar ; † November 11, 2014 in Dresden ) was a German food chemist . From 1953 to 1980 he held the chair for food chemistry at the TU Dresden . He also became known through his co-authorship of the extensive volume Analysis of Food , known as "Rauscher / Engst / Freimuth".

Life

Freimuth first studied pharmacy and later food chemistry with Benno Bleyer in Munich and Kurt Täufel in Dresden. In Täufel doctorate Freimuth in 1948. For his habilitation he did research at the former Institute for Animal Breeding Research of the Academy of Agricultural Sciences of the GDR in Rostock on the then still partly unexplored milk proteins.

After completing his habilitation, he was appointed to the chair for food chemistry at the TH Dresden in 1953, which he held until the 1979 winter semester. The focus of his work was "the research of nutritionally relevant changes in proteins during the processing of protein-rich foods." Thanks to Freimuth, the institute had modern instrumental methods of food research and passed these on in advanced training courses to food chemists who worked in practice. He supervised around 50 dissertations and several habilitation theses. According to former employees, Freimuth "increasingly came into conflict with the SED's university policy." Despite hostility, "he maintained a climate of tolerance and free opinion formation at his institute until he left."
