Roast beef with onions
Zwiebelrostbraten is a fried roast beef ( roast beef ) with roasted onions , to which the name refers. It is a traditional dish of Swabian and Austrian cuisine and is one of the classic dishes on offer in Viennese restaurants. In the Swabian region, the roast beef is often served with spaetzle and is considered a Sunday meal. Regionally, it is also sold under the names Wiener onion roast roast , Allgäu onion roast roast or Swabian onion roast roast .
To prepare it, slices of roast beef, seasoned with salt and pepper , cut at the edges, turned in flour and possibly rubbed with mustard and garlic , are fried briefly in butter , clarified butter or oil and kept warm. In the same pan, cut onions , possibly sprinkled with paprika , are roasted and removed. Then a little flour is added to the frying fat and the roast set is extinguished with stock , broth or wine , so that a slightly creamy sauce is created. Depending on the recipe, the onions also stay in the sauce, which makes them softer. Finally, meat, sauce and onions are served with side dishes such as fried potatoes , ribbon noodles or - in the Swabian region - spaetzle.
