ABB mustard or Düsseldorfer Mostert is a mustard specialty from Düsseldorf that has been produced since the early 18th century.

Düsseldorf Mostert

The “aechte Düsseldorfer Mostert” became known under the name “ABB”. The designation "Düsseldorfer Mostert" may only be used by manufacturers from Düsseldorf. The hot, malty-brownish mustard is made from brown and yellow mustard seeds. According to contemporary witnesses, the "Düsseldorfer Mostert" has not been made with grape must since the First World War , but with unfiltered Düsseldorf brandy vinegar. Incidentally, the production method has remained almost unchanged since 1726, as a 500 kg granite millstone is still used for grinding. Whether grape must was ever used in the production of Düsseldorf Mostert according to the original recipe cannot be proven.

Since August 2012 the names "Düsseldorfer Mostert", "Düsseldorfer Senf Mostert", "Düsseldorfer Urtyp Mostert" and "Aechter Düsseldorfer Mostert" have been protected geographical indications ( PGI ) under EU law . This means that the names are reserved for products that come from Düsseldorf and that meet the requirements of the underlying application.

The name "ABB" is derived from the initials of the company founder Adam Bernhard Bergrath.

The Dutch painter Vincent van Gogh depicted a gray mustard pot with the initials ABB with the anchor symbol in his painting “Stilleven met flessen en aardewerk” (Still life with bottles and ceramics) from Nuenen at the end of 1884 . The picture, painted in oil on canvas in the format 31.5 × 41.7 cm, is now in the Van Gogh Museum , Amsterdam .

ABB mustard is still offered today in the same gray stoneware pot on which the initials of the company founder and an anchor are depicted in blue. The pot is traditionally closed with a cork , although more modern versions with plastic closures are now being marketed.

A family Esser , from which the founder of the mustard factory probably came, can be traced back to Düsseldorf at the beginning of the 17th century. In the land tax book of 1632 a total of six Esser families were listed. Two of them with the name Wilhelm Esser , on Bolkerstrasse and in Lierenfeld.

  • In 1726, Wilhelmus Theodorus Esser (* 1695; † 1741) began producing mustard in the building at Ritterstrasse no. 30, known as “The City of Venlo”.
  • In 1741, after the death of his father, his son Godefridus Esser (1722–1774) inherited the factory; There is evidence for 1773 that he made mustard in Ritterstrasse, house No. 30 .
  • After his death in 1774, the widow of Godefridus Esser, Catharina Elisabeth Esser, took over the company.
  • Catharina Elisabeth Esser died in 1777 and the house on Ritterstrasse was sold; The production and sale of the mustard then took place in house no. 57 on Neustraße, called “Im golden Römer”, and later in a house in Mertensgasse.
  • In September 1781, the mustard factory was bequeathed to the then castellan of the castle , Johann Cornelius Bergrath. The takeover of the business and the continued distribution of the mustard were announced in the Bergische Wochennachrichten, Gülich-Berg . To ward off competition from Cologne, another advertisement in this newspaper in 1786 stated: “... that he has nowhere to be defeated, but that he lives here in the electoral palace right at the entrance ... [mustard] could be obtained ... what the outlaw Adulterated Düsseldorfer Mostardt can be recognized ”.
  • In 1797 production was relocated from the castle to Andreasstrasse 31, to the “Zur Stadt Cölln” building.
  • In the will of Johann Cornelius Bergrath in 1799 it was stated that his three sons inherit the property.
  • After the death of the father on May 2nd, 1800, the sons Adam Bernhard and Josef Bergrath took over the production. (The third son was a frater of the Capuchins .)

  • On October 7, 1800, in a division agreement, Adam Bernhard Bergrath agreed to take over his father's mustard business alone. Production was relocated to a house on Burgplatz. The mustard pots were now marked with his monogram and the Düsseldorf anchor . In addition to mustard, sealing wax, paper, textile tips, feathers and other items were also sold in his shop.

Note: Probably the brother Josef Bergrath continued to sell mustard in his own shop after the business split. It is not known whether this was ABB mustard or whether they made their own mustard. His widow Cordula, b. Schrodz, in any case, announced in the weekly Anzeiger in May 1808 that after moving to Bergerstrasse, mustard would continue to be sold there in the name of her underage children.

  • In 1817, after the death of AB Bergrath, his widow, Caroline Sybille nee. Sentz, the production in the house on Burgplatz No. 15, which was still being converted by her husband, called "Zum Zuckerhut". She is the namesake of the company AB Bergrath sel. WWe. In business she was supported by her son and successor Peter Bergrath. As late as 1850, the widow AB Bergrath at the address Burgplatz can be traced as the owner of the mustard factory and shop for writing materials.
  • In 1872 the company was located at Flinger Straße No. 7. In an advertisement under the company name AB Bergrath sel. Www. an "H. Ditges ”.

Note : In contrast to the entries in the commercial register, the surname “Dittges” was always written as “Ditges” with just a “t” in the address books and advertising.

  • In 1878 Heinrich Dittges took over the company as the husband of Peter Bergrath's daughter, Elisabeth. The fact that Heinrich Dittges became the owner of the ABB company is documented in a deed of the transfer of ownership to his son. Under the purveyor to the court Heinrich Dittges, production was first relocated to Flinger Str. No. 38, then to No. 7 and finally to No. 30 Schadowstraße.
  • A trademark applied for on January 30, 1895 was registered on May 14, 1895. It shows "ABB with anchor and a 4 at the end of the anchor shaft" and is currently still valid.
  • On March 31, 1896, Ludwig Dittges, the son of Heinrich Dittges, became the owner of the ABB company. From 1897 production was relocated to Worringerstraße No. 12 until 1900. From
  • In 1901, according to the address book, the company address of the company "AB Bergrath sel. WWe." Changed to "Stockkampstrasse 12". Under Louis Dittges was around 1911 the Dusseldorf competitor, which in 1826 by L. Mackenstein mustard factory was founded Mackenstein taken over.

  • In 1934, under Rudolf Schwenzner's brother-in-law, Albert Vomberg, the mustard production of ABB mustard moved to Bilker Straße 16.
  • On December 1, 1940, Albert Vomberg sold the company AB Bergrath sel. WWe for health reasons . to Fastrich and Mrs. Luise, Duisburg.
  • On May 11, 1965, the mustard factory AB Bergrath sel. WWe. Acquired by Frieda Frenzel, owner of the Düsseldorfer Senfindustrie O. Frenzel . This ended the independence of the mustard company Esser / Bergrath und Successor . The company taking over “Düsseldorfer Senfindustrie O. Frenzel” is best known for its “Düsseldorfer Löwensenf” brand.
  • From 1950 to 2000 the “ABB” brand for “aromatic herbs, spices, sauces, vinegar, mustard” was registered with the German Patent and Trademark Office, most recently registered to the owner Appel & Frenzel GmbH, Düsseldorf. This is currently held by the Düsseldorfer Löwensenf GmbH.

The former company Esser / Bergrath and Successor was only officially deleted from the commercial register on December 29, 1988. In 2001, Löwensenf was again taken over by Munich-based Develey Senf & Feinkost GmbH. ABB mustard will continue to be produced by Develey and sold in delicatessen stores and selected butchers in the Düsseldorf area . All of Düsseldorf's house breweries and traditional restaurants serve ABB mustard in traditional stoneware, but some have their own design.
