The citizens GmbH & Co. KG is a German manufacturer of prefabricated refrigerated dough and meat products ( chilled food ) mainly Swabian specialties. The medium-sized family business is based in Ditzingen near Stuttgart. The company is best known for the production of chilled Maultaschen, which make up around 50 percent of its daily production volume of 350 t.

history

The company was founded in 1934 by the architect Richard Bürger in Stuttgart-Feuerbach . In the first few decades it supplied butchers in the surrounding area with mayonnaise , meat and ox-mouth salad , which is why it was also known as “Mayonnaise Citizens” at the time. In 1962, Bürger, who had no heirs, handed the company over to his friend Erwin Bihlmaier. This began in the 1970s with the production of initially handmade Maultaschen. Erwin's son Richard Bihlmaier (1938–2020) added other Swabian pasta to the range. In 1978 the company headquarters moved from Feuerbach to Ditzingen. Another production site was inaugurated in Crailsheim in 1982 . In 2008 Martin Bihlmaier took over the management.

Corporate structure

At the headquarters in Ditzingen, around 200 people are employed in administration and in the production of small series. The main production takes place in Crailsheim (district Schwäbisch Hall) with 600 employees.

There is also a Bürger factory outlet in both cities.

Products

The company is the market leader in Germany for Swabian Maultaschen . In addition to over 2.5 million Maultaschen daily, other Swabian pasta specialties such as spaetzle or egg knobs, Schupfnudeln , Flädle and numerous Italian pasta specialties such as cannelloni , tortellini , gnocchi and ravioli are produced, as well as ready-made meals for restaurants and canteens. By-products under the private label "citizen" is also used for different brands produced.

The main customer is food retailers with 60 percent. In addition, large consumers such as canteens and canteens (30%) and industrial customers (10%) are supplied.
