Clotar Bouvier (born April 12, 1853 in Weiz , Styria , † September 26, 1930 in Oberradkersburg , Slovenia) was an Austrian grapevine grower to whom the Bouvier grape variety goes back.

Bouvier worked full-time in the banking business. However, he saw his passion in viticulture . At the family winery in Herzogenberg , he carried out experiments aimed at combating phylloxera and powdery mildew . He preferred the rootstock " Rupestris 9 " cultivated by Hermann Goethe . On behalf of the former Kleinoscheg sparkling wine cellar in Graz-Östing, he selected the Bouvier grape variety that was later named after him.

He spread the Bouvier grape variety in Styria (→ Viticulture in Austria ), Slovenia and Slovakia . In 1882 Bouvier founded a sparkling wine cellar in Oberradkersburg , which still exists today. The property in Slovenia was expropriated in 1945, and his son Fritz continued to run the Styrian part of the property after the Second World War .
