Dolce Gusto
The Nescafé Dolce Gusto is a coffee capsule system introduced by Nestlé in 2005 . The partly identical devices are sold under the brand names Krups and De'Longhi .
equipment
The first series from 2006 consisted of the models KP2000 (black / silver), KP2006 (black / silver / red) and the KP2002 (black / silver / white). Another version was added later, with the tank area also being silver (with the KP2002 the tank area is black).
What they all have in common is the pressure of 14 bar.
At the end of 2008 the new series was introduced, which brought some innovations. This includes:
- 15 bar pressure (instead of 14)
- energy-saving automatic switch-off (after 5 min.)
- partially chrome-plated parts
- wider drip tray
- magnetic capsule holder
In addition, the KP21xx (Melody2) models are offered in significantly more colors. At the beginning, the two series continued to exist side by side for a short time.
In mid-2009, the KP21xx / Melody2 machines will be supplemented by the Circolo series. This rounded design, as the name suggests, corresponds technically to the Melody2 devices, but has additional LED lighting for the cup area.
In September 2010, the previous two series were supplemented by three more. The Piccolo (KP10xx) is technically up to date with the Melody2 machines and is intended to appeal to customers with limited space. The design of the Fontana (KP30xx) is based on a faucet and technically corresponds to the Melody2 devices. The Creativa looks the same as the Melody2 machines, but also has an LC display. This can be used to program the machine and switch it on automatically, for example. In addition, you can now program the flow rate so that you can always use the same amount of water regardless of the cups you use and thus always get the same taste. The capsule types that are already available are preprogrammed, but can also be changed.
Depending on the series, the devices work with 14 or 15 bar pressure generated by a vibrating armature pump.

Capsules
The Dolce Gusto capsules, which have been developed since the early 1990s, consist of a five-part plastic / aluminum composite:
The capsule shell (2) made of a deep - drawn two - layer plastic film laminate has a drain opening (4) at the bottom through which the finished drink runs directly into the cup without contact with the machine. Above the drain opening there is an inserted filter base (5) in the capsule, the underside of which is designed as a labyrinth and thus supports the formation of the crema or serves as a kind of static mixer in the case of milk powder . On the top of the filter base there are spikes (3) which, when the capsule is pressurized, perforate an expanding base made of aluminum foil (6) above the spikes so that liquid with dissolved components can pass through. The actual preparation powder (e.g. ground coffee or milk powder) is located in the chamber (7) formed from the aluminum foil and a further, externally invisible, perforated plastic separating film (8). Another chamber (9) between the separating film and the externally visible printed upper film cover (1) of the capsule is used to compensate for different portion volumes of the preparation powder with unchanged outer dimensions of the capsule. At the same time, the plastic separating film retains preparation powder in the capsule even after use. The upper visible film lid is perforated by the machine with a hollow mandrel through which the hot water is pressed into the capsule during preparation.
The pressure or the flow speed of the water can also be adjusted via the number of spikes on the filter base - with the cappuccino capsule it is e.g. B. almost 70 spikes, the associated milk powder only 44 - the milk powder capsule also lacks the perforated separating film.
An empty capsule weighs around 3.4 g.
Alternative capsules
Matching capsules from the Swiss manufacturer Delica have been available in stores under the brand name Café Royal since June 2016 . The price is just below that of the original capsules. Compatible capsules from the Italian brand Gimoka are also available; in September 2016, 12 different types were available at around 60% of the standard price of the original capsules .
Since October 2016 there has been another option to use alternative capsules. With the help of a capsule adapter, it is possible to use all capsule brands of the K-fee system (including EXPRESSI from Aldi Süd , Tealounge System from Teekanne , Verismo from Starbucks ) in Dolce Gusto machines.
Jacobs followed with a product line at the end of 2018, and Starbucks at the end of 2019. Instead of 16 capsules, there are only 14 or 12 capsules in each pack. There are also capsules as own brands.
Other Nestlé systems
In contrast to the Nespresso system, which also comes from Nestlé and has one of the main hardware suppliers in Krups, the Dolce Gusto capsules are freely available in stores. At Nespresso, these can only be obtained online or in special Nespresso stores.

Each pack consists of 16 capsules. These are sufficient for 8 or 16 cups, two capsules are required for almost all milk-containing drinks: These drinks are prepared using a separate milk powder capsule that is included with the respective products. The milk capsules in the cappuccino are sweetened more than the standard latte macchiato.
* The amount refers to the suggested amount of Nescafe Dolce Gusto.
criticism
- See also: criticism of portion coffee machines
The coffee pod and coffee capsule systems are criticized, among other things because of the so-called lock-in . This means that the acquisition costs for the respective coffee machines are low, the follow-up costs for the coffee pods or capsules are - in some cases many times over - higher than for conventional coffee.
The capsule systems are currently not compatible with one another; different coffee capsules are required for each system. These are only available from the respective manufacturer.
The amount of rubbish that arises from the composite packaging of the coffee capsules is high compared to pad systems and classic filter coffee and pollutes the environment.
