A strawberry cake (colloquially also strawberry cake ) is one of the classic fruit cakes with fruits and cake icing , which are prepared in many variations and whose topping mainly consists of strawberries . In addition to the German-speaking countries, it occurs in France , Great Britain , Poland and Russia , among others . Fresh strawberries or strawberry pieces are always used, which are tightly packed and spread over the entire surface of a dough base and fixed with cake icing. Strawberry pie is often served with whipped cream.

Manufacturing

Various basic variants are common, but they can be varied in many ways:

  • The basis is a shortcrust pastry base , which is coated with jam, and a layer of sponge cake is placed on top. The strawberries are arranged on top.
  • The strawberries are arranged directly on a floor. This is often a biscuit, shortcrust pastry or Viennese base . A layer of whipped cream, cream or pudding is often applied beforehand as a separating layer to prevent the base from soaking through and to improve the taste .

The fruits are fixed with cake glaze , the taste of which can be refined by preparing it with fruit juice made from sugar-coated strawberries.

Due to its popularity, the strawberry cake is often a means of trying to record, also in Germany. In 2001 a 120 m long strawberry cake was sold in Kiel for charitable purposes. In Dresden a round strawberry cake with 1.80 m diameter was manufactured in 2002 and in Leipzig sold in 2009. 100 meters long strawberry cake in favor of aid projects. Also for a charitable cause, a 150-meter-long strawberry cake was baked by the kitchen team at the Steigenberger Conti Hotel in Kiel in August 2008 and then sold. The largest strawberry cake in Franconia was baked by a Bubenreuth bakery on the occasion of the 6th Erlangen consumer adviser days in 2009. It was able to be sold in over 2000 unique pieces for a charitable cause. According to the trade journal AHGZ, the largest strawberry cake in Hessen was made in June 2010 in a Frankfurt hotel belonging to the Best Western Group. It consisted of 500 kilograms of strawberries and 360 liters of cast and had a total length of 60 meters.
