Ewald Hinterding

Ewald Hinterding (born August 14, 1946 in Emsdetten ; died August 3, 2014 ) was a German chef . From 1985 to 2009 Hinterding was awarded one Michelin star in a row .

Life

Hinterding came into contact with cooking at an early age. His mother was a cook, and his relatives included winemakers , confectioners and wine bar owners . During his school days he already worked in his uncle's butcher shop and began an apprenticeship as a butcher after graduating from school . He completed his training as a chef in Düsseldorf . Employment in Seefeld, on Lake Constance and on the North Sea coast as well as in Cologne , Munich , Iserlohn and Essen followed .

In 1969 Hinterding married his wife Christel, with whom he had a daughter. In 1978 he and his wife opened the Pot-au-feu restaurant with a focus on French cuisine in a hotel in Münster - Hiltrup . In 1982 Hinterding took over the Davert Jagdhaus restaurant in Amelsbüren . After three years, the chef received his first Michelin star.

In 1997, the Hinterding in Lengerich opened its eponymous restaurant with an attached cooking school, which it operated until 2010.

In 2007 he published his book "The best recipes from my cooking school" with the recipes from his forty years of experience as a chef.

Hinterding was considered a wine connoisseur and often ended his cooking courses with a wine tasting in the in-house wine cellar.
