He received his license to practice medicine and was a practical veterinarian in Haßfurt from 1842, military veterinarian in Augsburg from 1844 and official veterinarian for the city and rural district of Augsburg from 1848 to 1852. With the relocation of the Central Agricultural School from Oberschleißheim to Weihenstephan , May was appointed professor of cattle breeding and veterinary medicine at the Academy for Agriculture there (now TU Munich, Weihenstephan location ). He held this teaching post until 1880. At the same time he had been working as an animal breeding inspector and hiking instructor since 1868.

In almost 30 years of teaching, May passed on his experience in the areas of animal hygiene, disease control and animal breeding to many students. However, he was particularly involved in the cleansing of the breed in Bavarian and German animal breeding and wrote important publications on all important livestock species. In particular, the textbook on pig breeding , the first edition of which he wrote himself in 1880, became a "bestseller" for German pig breeding and husbandry for over 70 years with subsequent editions by Eduard Meyer and most recently by Joachim Kliesch.
