Blanc comes from a well-known family of restaurateurs in Vonnas . In 1872 the auberge with café and restaurant was opened by his great-grandparents Jean-Louis and Virginie Blanc on Vonnas market square, in 1902 their son Adolphe, George's grandfather, took over the inn. Together with his wife Élisa Blanc, he continued to expand the gastronomy, with Élisa in particular, based on the experience of her mother-in-law Virginie, who helped the kitchen to flourish. Her poulet aux morilles (chicken with morels) became famous, based on the famous Bresse chicken . In 1930, his grandmother Élisa Blanc received the first Michelin star , in 1933 the second - the highest award at the time. Her daughter-in-law Paulette Blanc took over the restaurant in 1934. In 1943 their son Georges Blanc was born.

Career

Georges Blanc attended the renowned hotel management school École hôtelière internationale Savoie-Lémanin in Thonon-les-Bains , Haute-Savoie , on Lake Geneva in 1962, although he was more interested in aviation . After working in a few well-known restaurants and doing military service, he returned to the family business in 1968. Little by little he transformed the Chez la Mère Blanc restaurant of his ancestors into a luxurious inn, which he called Georges Blanc . He became interested in wine and built a wine cellar. In 1970 he received third place among the best sommeliers in France, and in 1976 he became a finalist in the Meilleur Ouvrier de France competition .

In 1981, Georges Blanc was awarded the third Michelin star and was named “Chef of the Year” by Gault Millau . In 1985 he received 19.5 points in Gault Millau, which had not yet been awarded. In 1985 he had a 17-hectare vineyard in Mâconnais and produced 150,000 bottles of wine. In 1990 Blanc bought a bakery and seventeen houses around his restaurant in the center of Vonnas. When the A40 motorway from Mâcon to Geneva was being built, he asked for an exit for his small town Vonnas, between Mâcon and Bourg-en-Bresse. This was built for 2.3 million euros. In 1996 he was one of the chefs at the G7 meeting in Lyon .

Today his son Frédéric from his first marriage is in the kitchen with him. Georges Blanc heads a company with over 200 employees, a turnover of around 22 million euros and an income of around 8 million euros. Blancs Restaurant is one of the oldest star restaurants in the world. In 2009 it had been in the Michelin Guide for 80 years (only with an interruption during World War II).
