Justus Heinrich Dientzenhofer was born as the son of the then prince-bishop's master builder of Fulda, Johann Dientzenhofer . In 1711 at the latest, the family moved to Bamberg, where the father had been involved in several building projects since 1708.

Justus Heinrich learned the mason and stone carving trade from his father. After his father's death in 1726, he took over the construction business and applied to be the Bamberg court architect. He received this position, but from 1726–1729 Maximilian von Welsch and then Balthasar Neumann acted as head of Bamberg's construction industry. In addition to planning and creating independent construction projects, Justus also worked as a construction manager for Balthasar Neumann.

In 1728 he went on a trip to Prague, where he probably met his then famous cousin Kilian Ignaz Dientzenhofer . After returning home, he married Anna Katharina Burger, who gave birth to three daughters over the next few years and a son, Georg Anton, in 1738. In 1732 he built Nonnenbrücke 1 as his home, in which a relief of him is said to have been preserved.

Because Balthasar Neumann was not satisfied with Justus Heinrich as the site manager for the construction of the seminary, in 1735 he called the Electoral Mainz builder Johann Jakob Michael Küchel to Bamberg. Küchel was appointed court architect by Prince-Bishop Friedrich Karl , so that Justus Heinrich Dientzenhofer was only able to occupy the third place in the building hierarchy. Nonetheless, he was elected Bamberg city council on September 30, 1736.

He could not achieve the fame of his father and his uncles Georg , Wolfgang , Christoph and Leonhard as well as his cousin Kilian Ignaz Dientzenhofer because he died at the age of only 42 years. The position of the Bamberg court architect was not filled again.
