Longeole
The longeole ( [lɔ̃.ʒol] , Geneva Saucisson ) is a traditional raw sausage from the canton of Geneva that has been awarded the Indication géographique protégée (IGP) certification (protected designation of origin) by the Federal Office for Agriculture since 2009 .
history
The longeole probably goes back to the Huguenots from the Dauphiné who fled to Geneva . According to tradition, it was invented by the monk Père Longeot , who is said to have added fennel seeds and rind to the normal sausage mixture . The longeole is first documented in writing in a Geneva cookbook from 1820. Since 1930, the Geneva vegetable farmers and the Geneva Butchers Association have jointly organized the Journée de la Longeole every year .
Manufacturing
The longeole is made exclusively from Swiss pork (ratio of pork - neck or neck bacon - raw rind 1: 1: 1) and seasoned with whole fennel seeds , curing salt and white pepper. In addition, white wine , garlic , onions , coriander and nutmeg can optionally be added as long as the fennel aroma remains predominant in the finished longeole. Other ingredients are not allowed. The sausage mass is then filled into pork or beef intestines, which gives the longeole its elongated shape. Then it is drained off and reddened at room temperature for at least twelve hours , but not smoked . The sales weight of the finished longeole is between 250 and 650 grams.
preparation
Since the longeole contains raw rind, it has to be cooked for a comparatively long time. Usually it is poached in hot water for two and a half to three hours and served with a gratin made from Geneva Cardon Epineux .
