Manuel Veith competed in his first European Cup races at the age of 15. In addition to the parallel competitions, he soon started in the snowboard cross (SBX) discipline , in which he achieved fifth place at the state championships in 2002. In 2003 he became Austrian runner-up in the parallel giant slalom. In four participations in the Junior World Championships, an 18th place in the parallel giant slalom in Prato Nevoso in 2003 was his best result. In January 2004 he made his World Cup debut in the SBX, and it was not until the following winter that he entered the World Cup in parallel competitions. In the 2005/06 season he won the Parallel European Cup and thus secured a fixed starting place for the World Cup.
On December 8, 2007, he celebrated the greatest success of his career by winning the parallel giant slalom in Limone Piemonte . He qualified for the World Championship in Arosa , which he finished with a 19th place in the slalom. His best result in four World Cup participations he achieved in 2011 in La Molina with sixth place in the slalom. This year, with ninth place, he also achieved his best placement in the Parallel World Cup. After his only World Cup victory, he made it to a World Cup podium four more times. In August 2013 Veith announced his retirement from active racing at the age of 27 after 76 World Cup races. He justified this step by wanting to concentrate entirely on the work in his parents' restaurant.
Since 2009 he has been in a relationship with former ski racer Anna Fenninger , whom he married in April 2016 in South Tyrol . The two live together in Rohrmoos near Schladming, where Veith runs the family-owned hotel.
