Michel Guérard

Michel Guérard (born March 27, 1933 in Vétheuil in the Val-d'Oise department ) is a French chef and one of the inventors of nouvelle cuisine .

Life

After attending the Lycée Corneille in Rouen , he began training as a pastry chef with Kléber Alix in 1950 . In 1957 he was employed as head confectioner at the Hôtel de Crillon , and in 1958 he was awarded the French Meilleur Ouvrier de France medal in the confectionery area , which Paul Bocuse was to receive three years later . After working as head confectioner at the Lido Theater , he opened his restaurant Le Pot au Feu in Asnières-sur-Seine in 1965 , for which he was awarded two stars in the Michelin Guide in 1970 .

From 1974 Guérard and his wife Christine ran the Hotel Les Prés d'Eugénie and received two Michelin stars for their restaurant just a year later. In 1976, Guérard published his first book, which today is regarded as the first description of nouvelle cuisine and has been translated into several languages: La Grande Cuisine Minceur (German for light, large cuisine). In 1977 he received the third star for his restaurant.

In 1978 the gourmet house Comptoirs Gourmands Michel Guérard opened in Paris and finally in 1983 the purchase of the historic Château de Bachen estate in the Tursan wine-growing region in southwestern France. In 1987 he founded the employers' association Chambre Syndicale de la Haute Cuisine Française with other “big hats” (see Gault-Millau ) and between 1988 and 1990 became its president . With the revival of an ancient La Ferme aux Grives inn in 1993 , Michel Guérard turned back to regional cuisine to help her get back on her feet with new ideas.

In 2015, Michel Guérard's restaurant Les Prés d'Eugénie was awarded three stars by the Michelin Guide and 19 Gault Millau points.
