Sodium ascorbate is the sodium salt of ascorbic acid .

Sodium ascorbate is a white, odorless solid that turns darker in color when exposed to light.
presentation
Sodium ascorbate is industrially synthesized from ascorbic acid, which is obtained by the Reichstein synthesis or possibly using genetically modified organisms .
use
Sodium ascorbate is used as an antioxidant , flour treatment agent and as a color stabilizer . It is used to prevent freshly cut fruit from turning brown . It is also used in meat in combination with nitrite curing salt in order to keep the red color of the meat. It is often added to canned fruit and vegetables, fruit juices and nectars, jam, jelly, marmalade, meat and sausage products, as well as bread, baking mixes, beer and wine.
It is generally approved in the EU as a food additive with the number E 301 without maximum quantity restrictions for all foods.
It is also commonly used to increase vitamin C levels. If this is the only reason why sodium ascorbate is used, it can be declared as vitamin C, otherwise it is designated as "E 301" or "sodium ascorbate".
