The company was founded in Cremona in 1907 by Pietro Negroni . Born in Camairago in the province of Lodi in 1884 , Negroni moved to Cremona at the age of 21 to run the local branch of a meat producer. Two years later he took over the plant and had it entered in the company register as "Società di fatto Pietro Negroni e Fratello". With the introduction of the low-temperature method , Negroni was the first salami manufacturer to succeed in extending the production cycle, which was previously strictly dependent on the seasons, to the whole year.

Under the direction of Pietro Negroni's son Paolo, various innovations were introduced from 1937, such as the Negronetto , a smaller version of the traditional Salame Cremonese, which was subsequently sold worldwide . The family tradition was carried on from 1977 by his son Pietro Negroni II. This implemented a structural change and a comprehensive investment strategy. The management was expanded and the production facilities were modernized and expanded. In 1990, the family was to the Kraft General Foods Inc. sold. In 1999 the company sold this to the Malgara Chiari & Forti group.

Since 2002 Negroni has belonged to the Italian food company Veronesi. In 2007 this merged the traditional brands Negroni, Montorsi, Fini Salumi and Daniel, which had been taken over over the years, to form Negroni SpA, which today forms the Salumi division of the Veronesi Group.
