Persan is a red wine variety . It is grown in the French wine-growing region of Savoie . Admitted it is in the departments of Savoie and Isère . In the Vin de Savoie appellation, it is one of the permitted secondary varieties. With low yields, you get clearly structured red wines with strong tannins . The wine should be aged for almost 10 years in order to develop its full potential. Persan was an important grape variety before the phylloxera crisis in the 19th century, but was later barely able to match the earlier successes. Due to the idiosyncratic character of the wines and the susceptibility to vine diseases, the area under vines fell from almost 200 hectares in 1958 to just 8 hectares in 1988.

Ampelographic varietal characteristics

In ampelography , the habitus is described as follows:

  • The shoot tip is open. It is hairy white wool with a reddish tinge. The yellow-green young leaves are hairy like a cobweb.
  • The dark green leaves are three-lobed (rarely also five-lobed) and slightly curved. The stem bay is Lyen-shaped open. The blade is bluntly serrated. The teeth are medium-sized compared to the grape varieties. The leaf surface (also called blade) is coarse with fine bubbles. The foliage turns bright red in autumn.
  • The cylindrical grape is small to medium-sized and has dense berries. The distinctly elongated berries are small and purple-black in color. The aroma of the not very juicy berry is quite neutral and slightly astringent.

The grape variety ripens around 20 days after the Gutedel and is therefore still early in international comparison. Since the Persan sprouts early, the shoot tips are very vulnerable to late frost. Compared to the genuine and downy mildew is moderately resistant.
