The Puszta-Hütte is a restaurant in Cologne 's Altstadt-Süd district . It was opened in 1948 as a typical "rubble hut " of the post-war period and sold a Hungarian goulash dish based on a traditional recipe. Even after moving into a permanent home in the 1950s, this goulash is still exclusively served in the fast-food restaurant to this day.

According to the restaurant, the founder, Max Lippert, found shelter with a Hungarian peasant woman after his captivity in Hungary. From this he received the recipe for a Hungarian goulash soup , which he made after his return to Germany in 1948 and sold it to street customers for immediate consumption from an improvised hut near Cologne's Neumarkt .

The hut opened shortly after the introduction of the Deutsche Mark . In Cologne, which was largely destroyed in the early post-war period, she was one of the pioneers of an emerging snack culture in which a "quick meal", which was previously barely widespread, established itself on the street. The spicy goulash was sold for the then high price of one mark per serving and was still very popular. The cultural anthropologist Gunther Hirschfelder classifies the Puszta hut as an early example of the “pluralization of taste” that was observed in the Federal Republic of Germany in the 1950s.

At the beginning of the 1950s, the company was relocated to a building about 30 meters away on Fleischmengergasse , the traditional Cologne street of the butcher's trade, and operated there as a fast-food restaurant with seats. The main building of the Puszta hut is still located there today, under the owner Nikolaos Sardis and his family.

A portion of Puszta hut goulash is served in a stainless steel bowl; The price includes a bread roll and, if desired, a second serving of goulash sauce. German beef , water, paprika , animal fat, onions , table salt , garlic and 21 different spices are used to make the goulash soup . In the neighboring towns of Hürth and Wesseling , the Sardis family opened branches of the Puszta hut; there are also mobile sales stands.

In a goulash test in the docu-soap Mein Lokal, Dein Lokal , the Puszta-Hütte prevailed against two other Cologne restaurants with its goulash at the end of 2015.
