Rose water

Rose water is an essential water of the rose or Rosa centifolia , but also of the dog rose ( Rosa canina ), which is obtained from the distillation of rose oil from rose petals. It is also called rose hydrosol . The scent effect of rose water is due to the 2-phenylethanol .

Applications

Rose water, which was produced in the Middle Ages and made famous (for example with Circa instans around 1150), is an important ingredient in certain types of marzipan and is also used to flavor other dishes, especially in Arabic , Indian , Iranian and French cuisine . A more elaborate variant of the yoghurt drink lassi [लस्सी], which is popular in India, is gulabi lassi [गुलाबी लस्सी] flavored with a little rose water . Rose water is also used in the manufacture of cosmetic products, especially for skin care . A Turkish dessert flavored with rose water , which is mainly offered during the fasting month of Ramadan , is Güllaç .

In Iran, production is traditionally carried out by boiling the rose petals collected from May to June in copper kettles and collecting the steam, which is passed through a pipe system, in water-cooled copper cans, from which the semi-solid rose oil is skimmed off.

Real rose water, which is a distillate from rose petals, must not be confused with an extract ( macerate ) from rose petals. This extract itself can be prepared by fragrant petals with distilled water draw in a warm place for a few days, then squeezed and the liquid eventually strained , is still being pure alcohol should be added for the sake of durability.

An alcohol-free substitute for champagne is also made from rose water, orange and pomegranate juice . This is used instead of champagne at motorsport events in Arab countries.
