Rubrocurcumin is a chelate complex that is formed from the pigment curcumin with oxalic acid and borates .
Presentation and extraction
The reaction of curcumin with borates in the presence of oxalic acid produces rubrocurcumin.

Rubrocurcumin has a red color in solution. Compared to rosocyanine , one molecule of curcumin has been replaced by oxalic acid in rubrocurcumin . Rubrocurcumin is an externally neutral compound, while rosocyanine is an ionically built dye. Boron complexes like rubrocurcumin are known as 1,3,2-dioxaborines.
