Sour role

Sour roll (Low German Sur Rull ) is a regional sausage specialty on the west coast of Schleswig-Holstein , where it can be found in its region of origin, Eiderstedt , but also in Dithmarschen and the Husum region. The sausage consists of pickled beef in a rumen casing and is considered the "Frisian variant of the Saumagens ". It is mainly eaten fried. Together with various vegetables and side dishes , Saure Rolle is also known as an independent, traditional meat dish in Schleswig-Holstein cuisine .

Originally, sour rolls were made from the leftover meat after the house was slaughtered , cooked in rumen casings that were sewn together and pickled to extend the shelf life. Today, Sour Roll is mostly made by artisanal butcher's shops in the manner of a coarse scalded sausage from coarsely cut, lean and fat beef and cut into small strips. Typical spices are salt , pepper and cloves . The meat mass is filled into sleeves with a large caliber of about 15  cm in diameter made of sewn up beef rumen (cleaned and turned). The meat rolls are sealed at the ends, scalded and then immersed in vinegar solution for at least 14 days.

In some cases, soaking in whey is also common. A variant is known in East Friesland as Rull in Suur ; it uses ground beef , which is seasoned with salt and chopped onions, stuffed in beef rumen and then soured in whey. A similar sausage preparation is known in the Netherlands under the name rolpens ( pens, German for 'rumen' ).

To prepare it as a dish, the sour roll is cut into approx. 2 cm thick ("finger-thick") slices, turned in flour and briefly seared. As side dishes are to (vegetable preparation made in Eiderstedt traditional "gestovte turnip" turnip -Würfeln in butter-flour sauce ) and boiled potatoes served, which are covered with the cooking fat or melted butter. The “Husumer Sour Roll”, on the other hand, is usually offered together with fried potatoes and coleslaw . Beans , peas and carrots , red cabbage , black salsify or "baked apples" (braised apple and onion slices) as well as potato purée and onion sticks are known as additional side dishes to the sour roll .
