Classic ham rolls (made from boiled ham, filled with cold, cooked asparagus )

Ham rolls or ham rolls are a classic component of cold platters or cold buffets . They consist of rolled ham slices with a filling.

For traditional preparation, slices of cooked ham are covered with cold, cooked asparagus and rolled up. Depending on the recipe, the ham is additionally coated with tartar sauce , smoked ham is used instead of cooked ham, or the ham rolls are coated with aspic or poured into aspic molds. Further or alternative ingredients and / or fillings such as mandarin wedges , boiled eggs , gherkins , mixed pickles , etc. are possible. Sometimes spicy sauces are served with it.

Sometimes the rolls are cut across and arranged in shorter sections; up to correspondingly small individual pieces, which are usually fixed with a party skewer , cocktail skewer or toothpick and then eaten as finger food.

Ham bags are a comparable dish .

Ham rolls came (again) into fashion as part of cold platters in the 1950s. Just like toadstool eggs and tomatoes , cheese skewers with grapes, mett and cheese hedgehogs or ham bags , they were part of the standard repertoire of cold buffets until the 1970s, especially in private households.
