Tomato juice is a made of tomatoes produced vegetable juice . Due to the heating of the tomatoes and the loss of water during production, it contains significantly more of the vegetable pigment lycopene than fresh tomatoes. Among other things, the plant pigment is said to have a cancer-preventing effect.

Furthermore, a study by the Institute for Nutritional Physiology of the Federal Research Center for Nutrition and Food in Karlsruhe has shown that the daily consumption of tomato juice significantly reduces LDL cholesterol and contributes to reducing oxidative DNA damage. Supposedly, tomato juice also stimulates the immune system . It is known that the Aztecs , Maya and Inca used tomato juice to make medicinal drinks.

Manufacturing

In Europe, the tomatoes required for production mostly come from Italy or Spain . They are first washed thoroughly. The washed tomatoes are briefly scalded with hot water in a cauldron to burst the peel. The shell is peeled off and the stalk is removed.

The tomatoes are usually first made into concentrate . This makes the manufacturer independent of the harvest season and lowers transport costs. The concentrate is later diluted back, that is, water is added to the concentrate again. Commercially available tomato juice, which were not produced from concentrate, are juice called. Salt , a little lemon juice and spices are often added to the tomato juice .

A special phenomenon is the above-average consumption of tomato juice when traveling by air. In 2008, for example, Lufthansa served 1.7 million liters more tomato juice than beer (1.65 million liters) on board its aircraft . This is probably due to the changed taste impression, which is created by the low pressure prevailing in the flight cabins, and the bitter substances curb the resulting appetite . In gastronomy, tomato juice is often served with Tabasco sauce , salt and pepper . It is also used in the preparation of cocktails ; the Bloody Mary is one of the most famous on its basis . In North America, especially Canada , tomato juice with added flavor based on mussel broth is popular and is used for the Canadian national cocktail "Caesar".

Since 1965 Tomato juice is one in the state of Ohio to the federal landmark . Ohio is a major contributor to the United States' tomato juice production .
