Torró de Xixona

Turrón ( Spanish ) or torrão ( Portuguese ) or torró ( Catalan ) is a variant of white nougat , a sweet made from almonds , honey , sugar and egg white . It is usually processed into rectangular oblong panels. Other possible ingredients are chocolate, candied fruit or peanuts, depending on the turrón variation. In Switzerland and Italy ( Piedmont region ) it is called torrone and is made according to a similar recipe.

The turrón comes from the Arab region and came to Spain with the Moors , where there is evidence that it has been produced since at least the 16th century. Today the turrón usually comes from the towns of Xixona / Jijona ( Alicante province ), Casinos ( Valencia province ), both of the autonomous Valencian Community , and Agramunt ( Lleida province ) in Catalonia . Turrón is traditionally consumed in Spain at Christmas.

The two original types of turrón (Duro and Blando) are differentiated according to their consistency. Both types contain almonds.

Turron Duro

Turrón Duro (when made in Xixona, called Torró d'Alacant or Turrón de Alicante ) is a "hard turrón":

Peeled whole almonds contained in a hard honey-sugar-egg white mixture, sometimes covered with wafers ("edible paper").

Turron Blando

Turrón Blando (when made in Xixona, called Torró de Xixona or Turrón de Jijona ) is a "soft turrón":

Soft, slightly fatty mixture of ground almonds, honey, sugar and egg white.

Torrone Classico

In Italy, the hard torrone Classico is made differently with hazelnuts, and it always has an outer wafer layer .

More varieties

In addition to these classic types, there are countless others. The most well-known are:

  • Turrón de Yema is the made with egg yolk and both taste and texture of the very the marzipan similar
  • Turrón de Chocolate with chocolate
  • Turrón de Fruta with candied fruits.
  • Turrón de Cacahuete , is made with peanuts instead of almonds.
