Alessandro Filippini (born December 31, 1849 in Airolo , Ticino , † December 8, 1917 in New York City ) was a Swiss cook and cookbook author .

Life

After training in Lyon, Filippini worked in various functions from 1866 to 1891, including restaurant manager and chef, in the famous Delmonico's restaurants in New York City , a gastronomic empire founded in 1827 by the brothers Giovanni (John) and Pietro ( Peter) Delmonico was founded, also an emigrant from Ticino in Switzerland . Filippini was the first to start systematically collecting the recipes of Delmonico dishes from 1855. He published this in 1889 by Mark Twain under the title The Table - The Delmonico Cook Book . Other cookbooks from his pen are One Hundred Ways of Cooking Eggs (1892), One Hundred Ways of Cooking Fish (1892), One Hundred Desserts (1893) and The International Cook Book (1906).

Inexplicably, Filippini's life and work remained largely unexplored for a long time, in contrast to his colleague Charles Ranhofer , who came from France and also head chef at Delmonico's. It wasn't until 2017, on the 100th anniversary of Filippini's death, and in February 2018 in the Tessiner Zeitung that a first biographical sketch based on primary sources appeared.
