As palmitate or ascorbyl palmitate is referred to ester of ascorbic acid as alcohol and palmitic acid as the acid component. Ascorbyl palmitate is an antioxidant and emulsifier . It is considered to be harmless and is a food additive with the number E 304, which is also approved in infant formula and infant follow-on formula , whereby it also refers to ascorbyl stearate, E 304 (II).

Extraction and presentation

Ascorbyl palmitate is obtained by esterifying ascorbic acid with palmitic acid. In the small intestine, it is slowly broken down again into the starting materials.

use

In foods, ascorbyl palmitate is found in sausage products, mayonnaise and chicken broth , where it is also used as a color stabilizer, among other things.

In cosmetic products , ascorbyl palmitate can be used as an antioxidant called ASCORBYL PALMITATE .
