Bullenschluck is the brand name of a bitter liqueur with 43% vol. Alcohol that is bottled in Sulingen, Lower Saxony .

Manufacturing and development

The Bullenschluck was first produced and developed by the pharmacist Hans Dunker. He had taken over the Rats-Apotheke a few years earlier. His father, who had bought the pharmacy in 1932, had died in the Second World War, and until Hans Dunker's license to practice medicine it was run by an employee for some time. In 1985 Hans Dunker died, and since then the pharmacy has been continued by his son Jens. The pharmacy in a half-timbered house has existed at this location since 1788, the manufacture for the production of the Bullenschluck has been there since 1949. At the end of 2011, the former Ratsapotheke was renamed "Bullenschluck Manufactory". Since then, only Bullenschluck and Bullenschluck merchandising articles have been sold there.

In 2013 it was reported that 80,000 to 89,000 0.7L bottles and an undisclosed number of smaller units are sold annually. In addition to the main sales area in northern Germany, orders are increasingly coming from southern Germany and also from the USA, Denmark, Switzerland and Italy.

Recipe

The recipe, unchanged since 1949, which according to their own statement is only known to Jens Dunker and daughter Janine Dunker, includes cinnamon, ginger, dried orange peel and juniper berries. Other herbal ingredients remain a secret of the Dunker family. Careful manual work should ensure the quality of the 43% bitter liqueur. The top secret recipe of the bull swallow does not contain any artificial flavoring, coloring or preservatives.

In 2013, the former private broadcaster FAN Television shot a report about the production of the spirit.

Ludger Abeln mentioned the bull swallow in his book Popular Lower Saxony errors. A lexicon. He described it as a "cult drink". The name has nothing to do with cattle or police officers. The rumor that it was created to avoid the alcohol tax is also false.

The city of Sulingen and the Diepholz region see the Bullenschluck as a regional product that is mentioned by name and is also given as a gift on official occasions. The mayor of Sulingen named the Bullenschluck as one of the products that made the place known nationwide . The bull swallow is also mentioned again and again in the national press in reports about events or special restaurants.

The bull swallow is mentioned in novels and reports by Bernd Gieseking , Sven Bremer in the DuMont Bildatlas 2017, Willi Voss and William Cohn in “The good tone of Cohn: Elegant through all situations”.

During the shooting of the Sulingen project, the story of the bull swallow is documented as a milestone in the local history of Sulingen.
