Calcium benzoate is a calcium salt of benzoic acid and is used as an artificial preservative for food. It is known as food additive E 213.
Calcium benzoate is mainly used in the production of canned vegetables. Especially for the preservation of pickled vegetables such as pickles , sour fruits and fruit juice concentrates. It is also used to preserve mayonnaise .
As an allergenic substance, calcium benzoate is becoming less important as alternative preservatives are used. It is unsuitable for the preservation of animal feed, as it is toxic to cats and even fatal in small quantities.
