The Culinary Institute of America , or CIA for short, is a school for gastronomy in New York , USA . It was founded in 1946 and is one of the most renowned cooking schools in the world. Due to its great success, a second school (CIA Greystone) was opened in St. Helena ( California ) in 1995 ; today there are a total of four study locations. A total of around 2800 students are taught each year. A three-year course costs around US $ 50,000 in tuition .

history

The school was founded under the name "New Haven Restaurant Institute" with 50 students and three teachers. The founders Frances Roth and Katharine Angell could in 1947 to a larger building near the Yale - University of move, 1951, the school received its present name. After the number of students had risen to over 1,000, the school moved to its current location in 1972, a former Jesuit seminary in Hyde Park, New York . In 1981 the school became the only institution authorized to award the Master Chef Certificate from the American Culinary Federation .

The students can choose between training to become a cook , baker , confectioner or pastry chef . The "Bachelor of Culinary Arts" degree is valued in international gastronomy. For students with work experience (at least four years) there is also the possibility of obtaining a shortened degree. In order to be admitted, six months of experience in the catering industry are required, and each program provides for an 18-month internship . Trained specialists have the opportunity to acquire a degree similar to that of the German master craftsman .

The students are trained by 140 specialist teachers in 40 test kitchens. Public restaurants and cafés in schools offer students the opportunity to gain experience in the kitchen and in service . On the New York campus, the school has three restaurants ( American Bounty Restaurant , Ristorante Caterina de 'Medici , and The Bocuse Restaurant [formerly Escoffier Restaurant ]) and two cafés ( St. Andrew's Café and Apple Pie Bakery Café ). The restaurant ( Wine Spectator Restaurant ) and a café ( Café by illy ) are located on the St. Helena campus. Two cafés ( CIA Bakery Café and Nao - New World Flavors - Latin American cuisine -) are located on the Texas campus .

The Food & Beverage Institute (FBI) founded by the CIA sells videos and books as well as tools and equipment, not just to students.

Alumni

One of the most famous former students was the cook and author Anthony Bourdain . The graduate Dan Coudreaut, the best of his class (1995), has been the head of the culinary innovation department ( Executive Chef and Director of Culinary Innovation ) at McDonald’s since 2004 .
