He completed his PhD B in 1979 with the thesis “On the objectification of performance-determining factors in road cycling disciplines and their development in the training process: a contribution to perfecting the theory and methodology of training in cycling”. As a professor at DHfK he was responsible for the theory and methodology of training in cycling and endurance sports. Junker published several cycling books such as "Radsport" (published in 1978), "Everywhere cycling: a guide for everyone" (1979), "Radsport - Spezialausbildung" (1987) and "Gut in Form durch Fahrrad" (1989, together with Siegfried Israel ). He dealt with biomechanical aspects of cycling, including frequency of movement and use of force, as well as pedaling technique and, in terms of training science, with endurance sports. In 1990, together with Günter Schnabel and Günter Thieß, he presented the book “Training terms for endurance sports”. In the German Cycling Association of the GDR Junker acted as chairman of the coaching council. Under his guidance as a trainer, Uwe Ampler  became world champion in 1986.
