Dodecyl gallate (chemically dodecyl 3,4,5-trihydroxybenzoate ) is a chemical compound from the group of substituted gallates and thus an ester of gallic acid.

Dodecyl gallate is a flammable beige solid that is practically insoluble in water.
use
Dodecyl gallate is approved as an antioxidant for food. Allergic reactions are known to occur in contact with the basic substance (e.g. from bakers). Toxic and carcinogenic effects are not known at concentrations in the normal range in the food industry.
