Ammonium adipate crystallizes without crystal water in shiny flakes in the monoclinic crystal system in the space group P 2 1 / c (space group no. 14) with the lattice parameters a = 615.0  pm , b = 889.7 pm, c = 869.0 pm and β = 98.21 °. Chemical properties

When heated to 100 ° C, half of the ammonia escapes and ammonium hydrogen adipate is formed. At 120 - 150 ° C the remaining ammonia escapes and the pure acid remains.

Ammonium adipate is used as a substitute for table salt . It is registered as a food additive under the number E359.
