Peanut sauce is a sauce based on products made from peanuts .

Satay sauce

Satay sauce (also called sate sauce and satee sauce ) is a seasoning sauce or dip that originally comes from Indonesia and Thailand and is mainly used for the satay grill dish . Similar sauces are also used in the national cuisines of Malaysia , Vietnam, and China . The sauce was introduced into the food culture of the Netherlands by the inhabitants of the former Dutch colony of the Dutch East Indies .

The main ingredient is roasted peanuts, which can also be replaced with peanut butter . Because of the different recipes for making peanut sauce, there are many variations. In addition to peanuts, water, milk , coconut milk , onions , garlic and other seasoning ingredients (e.g. coriander , cumin , chili powder , brown sugar and lemongrass ) are common ingredients.

Dutch variant

In Dutch cuisine , the sauce is popular under the name satésaus or pindasaus as an influence of the colonial era. The Dutch variant differs from the traditional sauce and is usually prepared with peanut butter, milk / water, ketjap, sambal and garlic. It is eaten with traditional Indonesian dishes such as grilled satay skewers, with rice , as well as with French fries and various snacks such as meatballs or hamburgers . Also known is the dish Patatje oorlog (in German 'French fries war'), which consists of French fries with mayonnaise , peanut sauce and onions and is offered in many Dutch food stalls. In the Netherlands, peanut sauce is also often served when grilling . The sauce is also available in Dutch supermarkets and takeaways.

Maafe

In Mali , Senegal and Gambia a peanut sauce with tomatoes is called Maafe (also wolof Mafé , Maffé , Maffe for 'dish', French sauce d'arachide for 'peanut sauce', bamana tigadèguèna , tigadenena for 'peanut paste sauce ', domodah or English Groundnut Stew for 'peanut stew '). It is eaten in different local variants with different side dishes. A variant of Maafe was introduced to the United States by slaves in the 19th century, where it is known as the Virginia peanut soup .
