Erich Schwingshackl

Erich Schwingshackl (born February 1, 1970 in Gsies , South Tyrol ) is an Italian chef .

Career

After training in Sexten , Monguelfo and Meran , Schwingshackl became deputy head chef at the Fink restaurant in Brixen . In 1992 he went to Germany to the Hotel Restaurant "Vier Jahreszeiten" in Hamburg, where he worked in the positions of Gardemanger , Entremetier , Poissonnier and Saucier . In 1994 he moved to Eckart Witzigmann's three-star restaurant “Aubergine” in Munich, and in 1995 to the Heinz Winkler residence in Aschau im Chiemgau , where he became head chef in 2002. Here he met his life partner Katharina Krauss. In 2005 he joined Krauss as managing director and moved to her parents' Hotel Reblingerhof in Bernried (Lower Bavaria) . There he opened his restaurant "Schwingshackl Esskultur" in 2006, which was awarded a Michelin star for 2008.

In November 2011 he was awarded the second Michelin star for 2012. At the beginning of December 2011 he and Katharina Krauss left the Reblingerhof. In May 2012 he opened the "Schwingshackl Esskultur" new in Tegernsee , which was again awarded a Michelin star. At the beginning of 2014 they also took over the associated Hotel Villa am See , which he left again in autumn 2017.

In December 2018 he opened the old ferry house on the banks of the Isar in Bad Tölz . In March 2020 this restaurant was also awarded a Michelin star.
