In the Pacific and Asia , bats are used as food by humans. Bats are consumed in different varieties in Indonesia , Thailand , Vietnam , Guam and in other Asian countries and cultures in the Pacific region. The Mariana fruit bat is a delicacy on Guam, where one species is endangered by hunting. They are hunted there for use as food and for their skin. The hunt takes place u. a. with nets and shotguns.

The 1999 Oxford Companion to Food describes the taste of fruit bats as similar to chicken and that they are "clean animals that only feed on fruit". Bats are prepared in different ways, such as grilling , barbecuing , deep-frying , cooking as a stew and roasting in a wok . The entire bat can be eaten fried. Bats are low in fat and high in protein .

A strong urine odor can develop from the bats during cooking. This can be reduced by adding garlic, onions, chilli pepper or beer.

Risk of disease and toxin transmission

Hunting and eating bats as bushmeat poses a risk to public health in West Africa due to zoonoses . Bats serve as pathogen reservoirs for Filoviridae such as the Zaire Ebola virus and the Marburg virus . People who come into contact with infected animals can become infected with the Ebola virus. The animals can also transmit Henipavirus and Lyssavirus .

Eating fruit bats can lead to Lytico-Bodig , a neurological disease. Paul Alan Cox of the Hawaiian National Tropical Botanical Garden in Kalaheo and Oliver Sacks of the Albert Einstein College of Medicine in New York City found that bats eat large amounts of sago palm fern seeds and, like some eagles, eat large amounts in adipose tissue of the pesticide dichlorodiphenyltrichloroethane - potentially storing a dangerous amount of toxins.

Soups , stews and curries are also made from bats. In Palau , bats are considered a delicacy. Flying foxes are prepared in Palauian soups with coconut milk , spices and ginger.

Bat stew is a stew made from different bats . In some recipes, fruit bats are used as an ingredient.
