Ful ( Arabic فول fūl for "sow" or "fava bean"), also Foul Medammas , Foul Medammes or Ful Mudammas , Arabicفول مدمس(“ Beans cooked over fire ”) is a simple dish that is widespread throughout the Arab world and is made from broad beans (also called fava beans or broad beans). It is sometimes referred to as the Sudanese and Egyptian national dish.

The dried beans soaked overnight are boiled in fresh water until soft. When using canned beans , the contents are only heated by adding a little water. In some regions, the beans are coarsely pureed, sometimes with garlic , a little salt and, depending on your taste, seasoned with cumin and other spices. The beans are served in a shallow bowl, generously poured with olive oil and with a sauce made from finely chopped parsley and a little lemon juice and pieces of oniondecorated. This is served with a thin flatbread and possibly sheep's cheese , chopped pickles , boiled eggs or diced tomatoes .

In Arab countries , this bean dish is also served with hummus , laban or tabbouleh for breakfast , but it can also be a snack ( mezze ) or a main course. In Upper Egypt, especially around Aswan, ful like falafel is served as fast food in flat bread ("Esch Ful"). In Saudi Arabia , Oman and the Emirates there is also olive oil and ground cumin , and less often chopped garlic .

Foul Medammes is also commercially available as canned goods, similar to baked beans .

The broad bean is the legume that belongs to the vetch family ( Vicia faba L.).
