Hummus
Hummus ( Arabic حمص hummus , DMG ḥummuṣ , Hebrew חומוס 'xumus , German , chickpea' ) is an oriental specialty of pureed chick peas or horse beans , sesame -Mus ( Tahina ), olive oil , lemon juice , salt and spices such as garlic and occasionally cumin is prepared.

Hummus is a popular appetizer that with the thin tab-like flatbread Pita been typed and other so-called Mezze ( Levantine starters, z. B. Kibbeh , Baba Ghanoush , Fattoush , Taboulé ) is consumed. Word origin and word forms
The word comes from the Arabic: hummus /حمص / ḥummuṣ (dialectal) or ḥimmiṣ / ḥimmaṣ (classical) and means "chickpea". The word is in Hebrew חומוס[ 'xumus ] written, mostly humus in Turkish .
According to Duden, the hummus (masculine) is just as correct as the hummus (neuter). The word forms Hommos and Hommus are also used in German . In English hummus is the most common spelling, in French houmous .
preparation
Chickpeas (in a regional variant: beans) are soaked and cooked until they can be easily mashed into a pulp. This is all the finer, the more of the outer shells (“skins”) of the chickpeas that are detached during cooking are removed (for the finest variant, peeled chickpeas are used from the start). This porridge is mixed with tahini , olive oil and lemon juice to a cream. Then it is seasoned with crushed garlic, cumin , pepper and salt, stirred until smooth ( yogurt is sometimes used to adjust the consistency ) and served cold. The surface is usually furrowed and / or pressed in with the narrow side of a spoon so that olive oil can run into it.
Finally, the whole can be garnished, usually with parsley, spicy paprika , cumin and / or Gewürzsumach sprinkled.
Hummus will keep for several days in the refrigerator; Depending on the ingredients, the aroma can gain in intensity.
