Vegetable soup is a soup made from chopped, mixed vegetables in a mostly clear broth . Unlike stews with a similar composition , it has a rather thin consistency and the vegetables stay firm to the bite. It does not contain meat or only in small quantities. Vegetable soup is often served as a starter .

The ingredients vary depending on the recipe, typical is a diverse mix of root vegetables such as carrots , celery and turnips , types of cabbage such as white cabbage , savoy cabbage , kohlrabi and cauliflower , legumes such as beans and peas as well as onions and leeks , none of which should dominate in terms of taste. Saturation still can potatoes , rice or noodles are added. A regional form of the vegetable soup is the Schnippelsuppe .

For preparation, the vegetables are usually diced into small pieces or cut into leaves, the more robust varieties sautéed in vegetable oil or with bacon cubes, topped up with water, vegetable or meat broth and all ingredients gently cooked. It is seasoned with salt and pepper , often with garlic and fresh herbs .

Famous vegetable soups are the Italian minestrone served with parmesan , the Vichyssoise , which can be served cold and warm, and the cold, uncooked Spanish gazpacho .

For vegetable cream soup , the ingredients are boiled until they are soft, the vegetables are strained , the liquid mixed with z. B. roux slightly tied and the vegetable pulp stirred back in.
