Oat milk

Oat milk is a form of grain milk made from seed oats . “Oat milk” is a slang term, not an official name, because milk substitutes may not be marketed under the name milk in the EU . The ordinance states: The term “milk” is reserved exclusively for the product of normal udder secretion obtained through one or more milking, without any addition or withdrawal. Therefore, products are sold in stores as "oat drinks" or "oat drinks".

The Swedish professor Rickard Öste developed a method for making oat drinks at Lund University in the 1990s. At that time he was concerned with lactose intolerance and organic farming . Shortly afterwards, with the help of some investors and his brother Björn, he founded the company Oatly to manufacture the drink. Other companies in the dairy industry also see this as a growth market.

The starting material is oat grains. These are peeled off before further processing . Then they are mixed with water and ground . Depending on the process, fermentation is also used. Finally, the mass is homogenized and the solid components are filtered out. The resulting filter residues, including the bran , are also suitable for consumption.

The aqueous extract can be emulsified by adding vegetable oil , creating the white color typical of milk. Depending on the desired taste of the oat milk, sweeteners , table salt and other condiments as well as flavorings can be added during processing.

Some of the end products contain other substances such as preservatives , thickeners , acidulants , vitamins such as vitamin B12 , and minerals such as calcium in the form of the alga Lithothamnium calcareum . Some of the products are subjected to ultra-high temperature heating , which means that the oat milk is preserved and can also be stored without refrigeration .

Manually

First, the oats or oat flakes are mixed with water and either soaked for several hours or boiled. The mass is then pureed until a homogeneous liquid is formed. Finally, the solid components can be filtered out, for example with a cheesecloth . The resulting filter residues, similar to the pomace when pressing fruit , are also suitable for consumption.

Oat milk is used by vegans , ovo vegetarians and people with lactose intolerance , milk protein allergies or soy allergies . If heating was dispensed with during production, oat milk is also suitable for a raw food diet.

Since oat milk is parve , it can also be consumed with meaty foods in the context of Jewish dietary laws .
