Hugo

Hugo is a weakly alcoholic cocktail of sparkling wine , lemon balm - or elderflower - syrup , fresh mint and mineral or soda ; often pieces of lime or lime juice are also included. The long drink spread from South Tyrol after 2005, especially in German-speaking countries.

On the one hand, the drink resembles a white wine spritzer ("Spritzter"), which has long been served in Austria as Kaiser-G'spritzter with elderflower syrup, or the tried and tested mixture of elderflower syrup and sparkling wine (see also " Elderberry sparkling wine "). On the other hand, the ingredients mint, lime and soda are reminiscent of the classic long drink mojito , although lime is not used in all Hugo recipes.

According to his own statement, the first cocktail called "Hugo" was mixed by the barkeeper Roland Gruber, who has been running the Sanzeno wine and cocktail bar in Naturns in Vinschgau (South Tyrol) since autumn 2005 . He was simply looking for an alternative to the trendy drink Aperol Spritz, which was very popular at the time . He chose the name "Hugo" by chance. Hugo has been widespread in Germany since summer 2010 at the latest .

The journalist and cookbook author Hans Gerlach published a drink with almost identical ingredients as in many Hugos served today in the summer of 2003. When preparing his “Holdirinha”, however, he oriented himself more towards the caipirinha , because the solid ingredients (two eighths of a lemon or lime, a sprig of mint) are first crushed in a beaker with three to four tablespoons of elderflower syrup. The mixture should then be topped up with crushed ice and mixed with 10 cl Prosecco. Due to the pounding of the ingredients and the lack of soda water, this cocktail differed significantly from today's popular Hugo, which is seen more as a " spritz variant".

Roland Gruber mixed his original Hugo with 15  cl of chilled Prosecco , 2 cl lemon balm syrup, a few mint leaves and a splash of soda , which he carefully mixed with a few ice cubes in a wine glass and garnished the drink with a piece of lemon.

While the preparation and serving in a bulbous wine glass on ice cubes has been preserved, Hugo is now more often prepared with elderflower syrup instead of lemon balm syrup and also often combined with lime pieces or slices, which are sometimes squeezed out over the drink. In other Hugo variants, white wine , sparkling wine or champagne are used instead of Prosecco, and / or elderflower liqueur instead of syrup . Elderflower liqueurs and syrups have enjoyed increasing popularity since the St. Germain elderflower liqueur was launched in 2007 and are now being offered again by numerous manufacturers. The author and barkeeper Stephan Hinz puts 1.5 cl elderflower syrup, 3 sprigs of mint and 2 lemon wedges in a wine glass with ice cubes and fills up with soda water and white wine.

In reference to the popularity of “Hugo”, a lemonade manufacturer named a cocktail made from gin , lime juice , elderflower liqueur and tonic syrup “Fcuk Hugo”.
