Isoascorbic acid (also erythorbic acid ) is an organic acid that is present at room temperature as a colorless, odorless, crystalline, water-soluble solid.

Isomers

It occurs as L - and D - isoascorbic acid. Its forms are epimers of ascorbic acid .

Isoascorbic acid is made from sucrose .

Physiological effect

In the human organism, isoascorbic acid increases the absorption of non-heme iron .

use

Isoascorbic acid is used in food technology as an antioxidant and stabilizer . In the USA it has been used more and more as a preservative since the use of sulfites to preserve raw vegetables was banned by law. Isoascorbic acid is approved in the EU as a food additive with the number E 315 for certain meat products with maximum quantity restrictions of 0.5, for fish products up to 1.5 grams per kilogram.

The sodium salt of isoascorbic acid, sodium isoascorbinate, has the food additive number E 316 .
