From 1880 to 1904 he worked as a teacher in the community of St. Gallen . From 1904 to 1918 he worked as a full-time school actuary in St. Gallen. Act

In addition to teaching at schools, Kuoni has written numerous teaching materials for language classes, local history and history lessons. His contributions to teaching issues appeared regularly in the Swiss Teachers' Journal , which has been published since 1862, and over a hundred articles and poems are currently documented. Since few teaching materials were available, he soon began to write textbooks for language lessons as well as for history and local history. He also wrote short stories for young people, historical dramas and poems.

Frequently in the relevant historical research reference is made to Kuoni's book "Balzli, the Swabian Goer". It deals with the story of a boy from Eastern Switzerland who was rejected by his father and who joins a group of Swabian children , mediates at a children's market in Ravensburg and works at a farm in Tettnang (Upper Swabia).

The best-known work by Jakob Kuoni is the collection of the “ Legends of the Canton of St. Gallen ”, the first edition of which appeared in 1903 to mark the centenary of the Canton of St. Gallen . In the volume, which has over 500 texts, he supplemented his own research with contributions from colleagues from all over the canton. To this day it is the only compilation of the canton's legends.
