Joseph Groll (born August 21, 1813 in Vilshofen ; † November 22, 1887 there ) was a Bavarian master brewer . He is the inventor of the Pilsner beer .

Live and act

Joseph Groll's father was a brewery owner and brewer in Vilshofen. He had experimented for a long time on the recipe for a bottom-fermented beer. Joseph Groll also learned the trade of beer brewer. In 1842 he was hired in Pilsen because he had a good command of the bottom-fermenting brewing process and the Bavarian brewers enjoyed a good reputation.

Up until then, the so-called “Oberhefenbier” had been brewed in Pilsen using top- fermentation. However, the quality and durability left a lot to be desired. The citizens of Pilsen with the right to brew beer had therefore decided to build a new brewery in order to create the technical requirements for a bottom-fermented beer that had a longer shelf life due to the way it was brewed. One spoke of "Bavarian beer" because the bottom-fermented brewing method was first able to gain a foothold in Bavaria. The climatic conditions in Bohemia were similar. Here, too, it was possible to store ice in winter and thus cool the fermentation tanks all year round to the 4 to 9 ° C required for bottom-fermenting brewing  .

On October 5th, 1842, Groll brewed the first brew in Pilsen, but it differed in some points from that of his homeland: He used other raw materials with the very low-salt, soft Bohemian water and the local Saaz hops . Instead of the previously used dark malt , Groll used a lightly dried, very light malt. This gave his beer, called “Urquell”, a characteristic taste and typical golden yellow color. On November 11, 1842 , it was first served in the Pilsen inns Zum Goldenen Adler , Zur Weißen Rose and Hanes . It was well received by the population.

Josef Groll's contract at the Bürgerliches Brauhaus in Pilsen expired on April 30, 1845. His successors as master brewers came from Bavaria until 1900. His younger brother Johann took over his father's brewery. Joseph Groll died on November 22nd, 1887 in the house of his daughter Kathi Hutter in Vilshofen. The Grollsche Brewery was partly merged into the Vilshofener Brewery Wolferstetter , which today (2013) produces a beer called Josef Groll Pils .
